Saturday Breakfast
Having been a bit under the weather for the past 2 days, I woke up this morning to a beautiful sun shining in my window and thought…. I do not feel like eating a single thing. But, I know that I must - otherwise I get crankier than I already am. So I pull on my favorite sweatpants, sweatshirt, and 2 pairs of socks to keep my toes warm - then plod clumsily into the kitchen.
At some point everyone I know has opened the refrigerator door and thought - this thing is full and there is nothing to eat. However, I am an overcomer - not easily conquered by a fridge full of miscellaneous and seemingly unassociated foods. So what did my sick self come up with this morning?

Sausages, polenta cakes and an apple. (I know, do not be jealous - please!) Did I mention the great part? Hormel actually has an “original” flavor pepperoni that has Gluten Free stamped on the back. Even better!
This is not really a recipe today, but I did choose to stage my food nicely on my pretty new plates. After all, a nice presentation of food does make it seem yummier. For the polenta cakes, I did half of them with marinara and a GF pepperoni slice - then the other half had a sundried tomato placed in the middle. (heat in 375-degree over for 10 minutes) The nice part about the slices with the tomatoes is that they were packed in olive oil and when heated the juice ran nicely over the top of the polenta - spreading its yumminess.
