Yuca Experiments

I really love yuca. It is such a versatile food and I cannot argue with the fact that my husband delights in my chips - in all their varieties. He bough me a HUGE yuca root at the store - picture one about 14 or more inches long. (dood, it was huge)
So I set about making a variety of yuca chips using different spices. Some inspirations include: Old Bay seasoning, salt, pepper, adobo seasoning, garlic salt, and many more!

Since I made batches of them this time I was able to see that the amount of time they take between finely slicing each chip to frying to seasoning. So towards that last bit of the massive yuca I started chopping them into stick-like fries. Not quite fast food size, but a bit smaller for easier crunching. I must say after 2 hours of chopping and frying and seasoning… I was DONE. So I took the remaining portion of chopped yuca and stuck them in the fridge, but not before frying a handful of the fries and seasoning them simply with salt and pepper. It was a nice combo.
