Five Bean Salad

In search of a simple, nourishing dish that would not disrupt my stomach’s finally tuned balance – I stumbled across this at the grocery store. Or, to be more exact…. I was standing in the aisle near canned beans and an idea began to form in my head. Put simply, this is the easiest side dish for all your summer barbeque’s and parties.

Five Bean Salad

1 can each of these beans: black, black-eyed pea, cannellini, garbanzo, white
1/2 orange pepper – rinsed, hulled and chopped small
1/2 red pepper- rinsed, hulled and chopped small
3 cloves garlic – minced
1/2 sweet onion – finely diced

Open beans and (thoroughly) rinse all in a large colander. Saute the garlic and onion in a pan with a pat of butter. Combine beans, garlic, onion and peppers. Gently mix with a large spoon. Keep in the refrigerator. (These stay good for at least a week)
