Special thanks to GF Goddess for this terrific recipe! I was looking for a GF cookie recipe that would end up perfect – and after having no luck converting some of my family’s traditional cookie recipes… I arrived at this little gem from Karina. Unfortunately, I have no pictures to convey the soft, chewiness of the cookies – they hold up beautifully! My husband who does not have gluten issues seems to like them and that is an accomplishment! I made small changes to the original recipe – I used some generic GF flour, olive oil in place of vegetable oil, and I buttered the baking dish thoroughly.
Just wanted to post this because I have become a fan of the recipe itself. Truly, the coconut adds so much moisture and substance that it seems to really hold it all together nicely. The true test will be whether my 10 year old nephew who is visiting us for the week will eat them. He is a picky eater – and seems to thrive on microwave mac-n-cheese and pop tarts (shudder…eeewww).
